Mango Seed Kadhi | Mango Kadhi Recipe - Mango Seed Kadhi is an excellent main course dish made with mango juice and seeds, added to tempered cumin seeds, boiled together till you get a soupy consistency. It is also called Mango Fajeto, Gujarati Fajeto or Aamras Ki Kadhi as well. Mango seed kadhi is a mango juice based curry that a tangy, hot, sweet and simply delicious taste and goes well with steamed rice or jeera rice. Ingredients:

  • Mango skin & seeds - 6 mangoes
  • Cooking oil - 1 tbsp
  • Chopped tomato - 1
  • Jaggery (Gud) - 100 g
  • Coriander powder - 1 tsp
  • Red chilli powder - 1 tsp
  • Turmeric powder - 1 tsp
  • Salt - 1 tsp
  • Hing (Asafoetida) - 1/4 tsp
  • Green chilli - 2
  • Chopped coriander leaves - 1 small bowl
  • Curry leaves - 5-7
  • Cumin seeds - 1 tbsp

Method:

1) Prepare ingredients and take a bowl of water and add mango skin and seeds in it.



2) Rinse the mango seeds and skin in the water and take out mango skin from the water.




3) Heat 1 tbsp oil in a pan on medium heat, add cumin seeds and saute for few seconds.
4) Add hing, curry leaves and green chillies and saute for few seconds.



5) Add chopped tomato and saute for a minute.
6) Add mango juice and seeds in it and mix well.



7) Add red chilli powder, turmeric powder, coriander powder, salt and mix well.
8) Add half of the jaggery (Gud) in it and mix it.



9) Close the lid and cook it for 10 minutes on high heat.


10) After 10 minutes, open the lid, mix and taste it.
11) If you want more sweetness in the kadhi, add remaining jaggery (Gud) and mix it.
12) Close the lid and cook it for 5 minutes on medium heat.
13) After 5 minutes, mango kadhi is almost ready, garnish with chopped coriander leaves and mix it.



14) Now sweet, tangy and spicy mango seeds kadhi is perfectly cooked, serve it with steamed rice or jeera rice.
