How to make Umbadiyu in pressure cooker / Umbadiyu / Surti Undhiyu - Papdi Umbadiyu / Undhiyu is a delicious dish served hot during winter, especially during Makar sankranti or Uttarayan (Kite flying Festival). It is a mix and seasonal vegetable dish with traditionally made slowly in earthen pot native to the town of Surat from Gujarat India. It gets its name Undhiyu / Umbadiyu (upside down) while cooking dug beneath the ground and fired from above. With advancement in cooking this dish is now also made in kadais and cookers.

I have cooked in pressure cooker to make this delicious gujarati cuisine and it cooks very fast !!!  If you don't get this beans you may use alternative broad beans, however, Surti papdi tastes best !!!!!!!! Enjoy this yummy dish this Uttarayan with family and friends.

Ingredients:
  • Valod papdi (Flat green beans) - 300g
  • Baby potatoes - 8 pcs
  • Sweet potato - 1 pc
  • Ajwain (carom seeds) - 1 tsp
  • Green chutney - 1 bowl (1 small bunch green coriander leaves, 2 green chillies - blended)
  • Salt - 1 tsp
  • Oil - 1 tbsp
Method:
*Prepare ingredients.




* Cut sweet potato into small pieces.


* Make cut or slit on baby potatoes.






* Fill green chutney into the baby potatoes.




* Heat a pressure cooker on medium flame.
* Add 1 tbsp oil in it.


* Add ajwain (carom seeds).


* Add papdi, sweet potato's pieces and salt.






 * Add green chutney and mix it well.


  
                                       

 * Add half glass water.



* At last, put baby potatoes on it.





* Close the cooker lid and cook it till 3 whistles on high flame.


* Let the cooker cool down.


* Open the lid and cook it for few minutes to make it dry.


* Now delicious and spicy papdi is ready to serve.


* Enjoy the papdi umbadiyu.
