Aam Ka Achar Recipe/Traditional Raw Mango Pickle - Here is a sour, spiced and tangy Aam Ka Achar Recipe made the Gujatrati way. A mix of Indian spices is added to the pickle to provide a unique taste. Aam Ka Achar/Mango Pickle is a tangy and spicy condiment made from raw mangoes that adds an extra taste to the meal. Aam Ka Achar/Mango Pickle is served as a side dish along with food in most Indian households. Mango Pickle goes very well with Paratha/Roti and Vegetable curry/Dal as well. Here, I have presented Aam Ka Achar/Mango Pickle Recipe with step by step process.

**Aam Ka Achar**

Ingredients:
  • Raw Mangoes - 5 pcs
  • Oil - 5 tbsp
  • Salt - 3 tbsp
  • Turmeric powder - 3 tbsp


*Masala Ingredients*

  • Split Fenugreek (Methi kuriya) - 185 g
  • Split Mustard seeds (Rai kuriya) - 65 g
  • Kashmiri chilli powder - 5 tbsp
  • Turmeric powder - 4 tbsp
  • Salt - 4 tbsp
  • Asafoetida/Hing - 1 tsp
  • Luke warm oil - 9 tbsp (135 ml)


Method:

1) Prepare Ingredients.



2) Cut mango and remove seed and cut into slices.




3) Add turmeric powder and salt and mix it well and leave it for 2 days for marination.



4) After 2 days, keep it into sunlight for 3-4 hours to make it dry.




** Masala preparation**

5) Take a big plate and add split fenugreek seeds (Methi Kuriya) and split mustard seeds (Rai kuriya) and mix it well.




6) Add salt and turmeric powder in it and mix it well.
7) Make a gap and add luke warm oil in it.





8) Add hing and red chilli powder in it and mix it well.
9) Keep aside for 15 minutes to cool down.




**Achar making**

10) Take a bowl and add achar masala and little oil in it and mix it.
11) Add dried mango pieces and mix it.






12) Finally, mango pickle is ready, store it into a air tight jar for 4-5 months.
