Achar Masala Recipe / Homemade Pickle Masala - also called as a methiya masala or shambharyo. Achar masala is very popular in Gujarati cuisine, mostly use in different kinds of Gujarati pickles or use as a sides like chutney. It is super easy to make at home and once you make it you would feel that there is no point for substandard pickle masalas which are available ready made in the store. Achar masala stands out for its bright color and distinct aroma. Once you make pickle masala, you can easily store it up to 12 months into the airtight jar, no need refrigerate. You can make Mango pickle, Gunda pickle, Carrot pickle and your favourite pickle is ready. Here is a simple recipe to make it. Do try it at home and let me know how was your experience.
** Achar Masala **
- Prep time - 12 mins

Ingredients:
- Split Fenugreek seeds (Methi Kuriya) - 185 g
- Split Mustard seeds (Rai Kuriya) - 65 g
- Kashmiri red chili powder - 5 tbsp
- Turmeric powder - 4 tbsp
- Salt - 4 tbsp
- Asafoetida (Hing) - 1 tsp
- Cooking oil - 9 tbsp (135 ml)
Method:
1) Prepare ingredients.
2) Take a big plate and add split fenugreek seeds (Methi kuriya).
3) Add split mustard seeds (Rai kuriya) and mix it well.
4) Add salt (As per taste) and mix well.
5) Add turmeric powder and mix well.
6) Make a gap and add luke warm oil in it.
7) Add hing (Asafoetida) powder and red chilli powder in it and mix it well.
8) Keep aside for 15 minutes to cool down.
